Yum! The Lenten spaghetti sounds delicious! I love lentils (for real!). I'm going to make something new this week.
Stir-Fried Prawns & Beansprouts with Peanut Sauce.
2 9 oz. packets thread noodles
1 lb. frozen prawns
1 bunch green onions
12 oz. beansprouts
2T peanutbutter
3T coconut milk
1 garlic clove, crushed
2T vegetable oil
salt and pepper
juice of 1 lemon
Place the noodles in a pan of boiling water. Remove the pan from the heat immediately and leave to stand for 4-5 minutes, then drain. Meanwhile, chop the onions diagonally. Heat the wok, add the oil, and when smoking add the spring onions and garlic. Stir vigorously to prevent sticking for 1-2 minutes. Add the prawns and beansprouts and cook for 2-3 minutes more. Add the peanut butter, coconut milk and lemon juice. Stir well to make a smooth sauce. Heat through. Adjust the seasoning as necessary. Serve on a bed of noodles.
