Lentil Bolognese
1 onion, chopped
2 garlic cloves, crushed
2 carrots, grated
2 celery stalks, chopped
3 T. olive oil
2/3 cup red lentils
1 14oz. can diced tomatoes
2 T. tomato paste
2 cups stock
1 T. fresh marjoram or 1 tsp. dried
salt & pepper
In a large saucepan, gently fry the onion, garlic, carrots, and celery until soft.
Add the lentils, tomatoes, paste, stock and spices.
Bring to a boil then partially cover with a lid and simmer for 20 minutes until thick and soft.
This recipe has become our Saturday night staple. I serve it with spaghetti. Everyone is our family likes it which is a real feat during Lent!
