From Cheryl Meng
In medium sauce pan sauté in generous amount of olive oil for several minutes over medium heat:
One large onion, chopped
½ cup roughly chopped walnuts (yes, walnuts – you won’t be sorry)
2 large cloves garlic, chopped
2 Tbs. spaghetti seasoning (I like Frontier from the co-op)
Salt and pepper
Add:
½ cup fresh tomato salsa
½ - 1 cup sake, cooking sherry, or other white wine
Cook until liquid is absorbed. Meanwhile cook spaghetti noodles and heat up 2 cups Prego spaghetti sauce in microwave.
Add to sauce pan:
Several handfuls fresh spinach
One can drained and rinsed kidney beans
Cook just until spinach begins to wilt. Add spaghetti sauce. Heat through, but don’t boil – you don’t want to kill the spinach.
Drain noodles and toss with olive oil. Spoon sauce over noodles in individual pasta bowls. Yum! Yum! Yum!
